Sukuma Wiki is a type of kale popular in East Africa. The name Sukuma Wiki literally translates to ‘push the week’. Theories as to the etymology of this could be that the kale is an abundant and relatively cheap vitamin source and thus suitable to cordon off the hunger pangs even when one is deep in the throes of economic despair. Or that the strong nutritional value of kales will keep you going for weeks and weeks on end. Kales are rich in vitamins A, C and K. They contain manganese, calcium and iron as well as being rich in fibre. Most kale in East African homes are prepared by cooking the kales to a fried mixture of onions and tomatoes. However, kales can also be prepared in other interesting ways.
Today, after cooking fish fillet, I had some leftover ingredients which I did not want to waste. Being a fan of experimental cooking, I decided to cook them in the kales. What I had was one beaten egg and in a separate bowl, a mixture of black pepper, bread crumbs and wheatflour which I had used to coat the fish. After frying the onions until golden, I added in the mixture of black pepper, bread crumbs and wheat flour. I cooked it for a while, put in some sliced tomatoes and covered until ready. I added the egg and scrambled it in the contents of the pan.
What I had now was a tangy paste to which I added the sukuma wiki. It was a lovely way to cook the sukuma wiki.
