Maize -or corn as it is known in other places- is a staple food in many parts of East Africa. Maize is usually prepared as githeri whereby it is mixed with beans and cooked with tomatoes and onions, as porridge, or as a cake-like mush known as ugali.

However, maize can also be grilled, creamed and used in salads. To grill it, you will need six ears of maize, butter, salt and pepper. Prepare the outdoor grill and preheat it. Coat each ear of corn with butter, salt and pepper. Next, wrap each ear in aluminium foil and grill, turning it until cooked on all sides.

To cream maize, you will need some maize, a cup of cream, salt, sugar, black pepper, butter, a cup of milk, some all-purpose flour and grated cheese. Over medium heat, combine the maize, cream, salt, sugar, pepper and butter. Whisk the milk and flour and stir into the maize mixture. Keep stirring until the mixture is thick and the maize is cooked. Once you remove from the heat, stir in the cheese until it melts.

For a maize salad, you will need maize, tomatoes, onions, coriander, limes, vinegar and salt. In a bowl, mix the maize, tomatoes, onions and coriander. Squeeze in the lime and add the vinegar. Stir the mixture and season with salt. Cover and chill before serving
