Chef Pierre Thiam is not only a chef he is also an author, a business man and above all a culture and food ambassador from Senegal
Chef Pierre Thiam culinary career started way back in the 1980’s.Growing up he only used to see women cooking in his home country Senegal. The chef says his mother and aunt taught him to cook many meals. The only man he ever saw cooking at this time was a Vietnamese man.
In 2001 Chef Pierre Thiam decided to bring his cooking skills to Brooklyn, USA. He even opened up two restaurants Le Grand Dakar Restaurant and Yolele. The talented chef loves using his hands while cooking because he believes the give him a feel of the ingredients which is part of the cooking process. But presently he owns the Pierre Thiam Catering. However he admits that he plans to open a third restaurant.
In this video Chef Pierre Thiam is preparing fonyo salad. Fonyo is an ancient Senegalese grain which is over 5,000 years. In fact the Chef is an advocate of fonyo which he says is very nutritious and matures in 6 to 8 weeks. To enable him to practice culinary perfectly, the chef has travelled widely to bring out a distinct world taste. He has also encouraged chefs in his home country and in USA also to prepare traditional authentic meals.
Chef Pierre Thiam is also a cookbook author of Yolele! Recipes from the Heart of Senegal which is published by Lake Isle Press. A second book from him is also on the way.
