In Kenya, the nilotic Luo tribe which lives on the shores of Lake Victoria and who traditionally practiced fishing as their sole socioeconomic activity are said to account for most of the fish consumption in Kenya. The Luo don’t just love fish; they adore it. They fall to their knees before the fish gods.

Well, maybe some of the foregoing has been grossly overstated here. Besides, I know some Luo people who abhor fish, and some Kikuyu people who would rather hand you their kidney than their plate of fish.

Here’s how to make some marvellous grilled tilapia. You will need a cup of vegetable oil, salt, cayenne pepper, lemon juice, onion, green pepper, a spoonful of vinegar, and clean tilapia. The number of tilapias depend on the number of people, but the typical serving is one fish per person.

Combine the ingredients save for the fish. Slit the sides of the fish and rub oil and spices into the slits. Let the fish marinate for a bit in the bowl, and then roast the fish over charcoal fire. Alternatively, you can grill it over a gas grill, or broil it in the oven.
