Plantains are one of those foods we probably required slapped down our throats when we were younger. As a child, I could never reconcile with the taste of plantains. They were from hell!
Needless to say, I love them now. Today we shall be cooking plantains, with meat. To cook this, you will need a cup of water, beef, salt, black pepper, curry powder, cayenne pepper, cooking oil, onions, tomatoes, tomato paste, coconut milk, bay leaf and plantains.
Boil the water and add the meat, salt, pepper, curry powder, and cayenne pepper. Simmer, and in a separate pan, fry the onions, tomatoes, and tomato paste. Add the coconut milk and bay leaf, and then simmer while covered.
Add the plantains to the meat and cook until the meat is ready and the plantains are tender, then add the other paste containing tomatoes, onions, and coconut. Serve with rice or ugali.
